Shanghai Style Borscht

Start by first browning the oxtail on all sides in a deep set pot. Once browned, remove and add in onions and garlic. Deglaze the pot with 1/2 cup of wine. After the wine has reduced by half, add in the veggies and tomato paste. Cook until veggies soften ~5 mins. Add the oxtail back and pour in tomato sauce. Coat everything, then add in water. Stew for two hours. At the end, taste to see if you need to add some sugar or salt to balance out the tomatoes. Add the seasonings one tbsp at a time until you reach the flavor you’re going for.
