Girl dinner meets skincare dinner! This dish is done in 5 mins and is delicious and nourishing. It's packed with ingredients that help add moisture back to the body, according to Chinese healing practices, like sesame seeds and buckwheat noodles.
1. Combine 1 tsp of diced garlic with 1 Tbsp soy sauce, 1 Tbsp rice vinegar, 1 Tbsp sesame paste, and 1 Tbsp sesame seeds in a bowl.
2. Then add in 1 tsp of chicken bouillon powder (if vegan, sub with mushroom bouillon), 1 tsp sugar, and optionally chili flakes.
3. Bring a pot of water to boil and cook soba noodles according to package instructions.
4. Once noodles are cooked, add a 1/4 cup of the reserved noodle water to the bowl with the garlic, soy sauce, and sesame paste mixture and stir well.
5. Add in the cooked soba noodles, then top with sliced cucumber, sesame seeds, and chopped scallions.
