My go to pizza dough recipe 🍕 • INGREDIENTS: - 2.5 cups of water - 1 tsp of sugar - 2 tsp of dried yeast - 7 cups flour - 1.5 tsp salt - 6 tbsp olive oil - Additional oil to coat bowl and dough - Optional: 2tbsp of sourdough discard INSTRUCTIONS: - Combine water, sugar, and yeast. - Mix and let sit for 10 min so yeast can activate. - In the meantime, get your 7 cups of water, add salt and EVOO to it. Mix well. - Create a well in the flour and pour in the yeast, water mixture. - Stir to combine with spatula then knead by hand. If you do have sourdough, add now! - Remove dough from bowl and knead on a lightly floured surface for 15 MIN. - Once the dough is smooth and bouncy, plop into a well oiled bowl and add some oil on top of dough to prevent sticking. - Let it sit overnight, covered with plastic wrap, or at least 2 hours. - After resting dough, punch down, then knead again for 10 min. - Quarter the large dough into 4 pieces and roll into a ball. Rest covered for 1 hr before making the pizza. If you want to use for later, wrap dough in plastic wrap and place in freezer. When you want to use it, place dough in fridge and use after it has defrosted. - Set oven to 500F with your pizza stone, cast iron pan, or baking sheet inside. - Take out your hot surface when you’re ready to assemble the pizza. Dust it with cornmeal, rice flour, or just plain flour. - Stretch out the dough with your hands and add to the hot surface. Assemble, then place into oven. Bake for ~10-15 min.
