Grilled Rainbow Trout with Spicy Herb Sauce

1. Stuff the rainbow trout with slices of lemon, thinly sliced onions, oregano, and chives.
2. Rub both sides of the stuffed trout with olive oil, salt, and pepper.
3. Preheat your grill to 350-400°F. Place the fish on the grill and cook for 7 minutes on each side. (Alternatively, preheat oven to 450°F, then lower the heat once the fish is in).
4. For the sauce, blend together 4 garlic cloves, a few sprigs of oregano, a handful of parsley, a small piece of scorpion pepper, 1/2 shallot, 1.5 tablespoons of salt, 2 tablespoons of red wine vinegar, and 1/4 cup of olive oil until smooth.
5. Serve the cooked fish with a drizzle of the prepared sauce on top.
