Grandparent's Pork and Lotus Root Soup

A comforting and nourishing soup, reminiscent of a magical cure-all often made by grandparents and aunties in the Asian community. Perfect for steadying the mind, recharging, and taking care after an overwhelming day.
Wash your pork then add to a pot with 1 sprig of spring onion and 4 slices of ginger. Add in 2 tbsps of wine, then add in enough water to cover everything. Bring everything to a boil, then let it cook for about 5 mins. Drain the pork and wash off the scum. Discard scallion and ginger. Prep your corn by chopping into 2 inch pieces and your lotus root (peeled and sliced into 1 inch pieces). In a clean pot, add your blanched pork, corn, lotus root, goji berries, remaining ginger slices, and spring onion. Add enough water to cover, then bring to a boil. Decrease the heat to a simmer and cook for 1 hour 30 mins, adding a few tbsps of salt towards the end to taste.
