Clean mackerel and sprinkle sake over the inside and outside to remove fishy smell. Dry fish thoroughly, then salt lightly on the flesh side. Let sit for 20 mins to help draw out moisture or pack in paper towels in the fridge overnight. Remove salt, then place skin side down on baking sheet and bake at 400F for 15-20 mins or until golden brown. Serve with a lemon wedge, a mountain of grated daikon, and add 1 tsp of soy sauce on top of grated daikon.
