shiitake mushrooms

Instructions
Start by cutting the daikon radish into 1 inch pieces and peeling In a separate bowl, rehydrate the dried mushrooms by letting them soak in some boiling water for 10 min Add the radish, dried mushrooms, and kombu to a pot and add in both the water from rehydrating the mushrooms & the water we’ll be using to cook it all Make sure you’re using just enough water so that it covers everything Bring to a boil, then let it simmer for 20-30 mins or until the radish is soft enough for a chopstick to easily pierce it Add in 1 tbsp soy sauce and the goji berries and let everything simmer for another 15-20 minutes Lastly, remove the daikon and reduce the leftover water down by 1/4 to create a flavorful sauceView original recipe
