Learn to make Trinidadian Cucumber Chow, best enjoyed with a drink on a hot summer's night. This quick and spicy snack combines thinly sliced cucumber with garlic, culantro, habanero, lime, and frozen mango, then allowed to sit for flavors to meld.
Slice the cucumber thin into a container. Press in the garlic clove using a garlic press. Chop up the culantro leaves and 1/4 of a habanero then add them in. Juice in 1 lime, add a sprinkle of salt, sesame seeds (if using), and the mango. Let it sit for at least 15 minutes at room temperature or 1 hour in the fridge so the flavors get to know each other and the mango can defrost. Enjoy!
