Add 1.5 cups of water to a pot and bring to a boil Drop in the dried seaweed, daikon, and kabocha squash, then let that cook for 5 mins or until the veggies become soft enough to be pierced with a chopstick Remove the seaweed, then add in silken tofu and the dashi concentrate Let the tofu cook for another 5 mins, then add in soba and cook for 5 mins or according to the time on the package instructions Serve with kimchi, kumquats, and the lightest dusting to chili flakesView original recipe
