Start by prepping your sauce, which is combining the garlic, soy sauce, vinegar, sesame paste, bouillon powder, sugar, chili flakes, and sesame seeds Bring the water to a boil in a pot, then cook the soba according to package instructions Once the noodles are done in a few mins, take 1/4 cup of noodle water and combine with the sauce, stirring vigorously You ultimately want the sauce to have a semi thick texture that coats the noodles but not so thick that it’s like peanut butter If the sauce is too loose, add more sesame paste 1 tbsp at a time Add in the noodles, then top with scallions, cucumber, and a little more sesame seeds!
